It’s officially fall and you know what that means: soup season. 🥣
We’re making this crack chicken soup with hidden.valley ranch seasoning pretty much every week until spring. It’s just that good! It’s chicken bacon ranch meets soup, meets a pot pie.
Here’s how to make it!
Saute:
🧅 1 diced yellow onion
🌱 2 diced ribs of celery
🥕 2 diced carrots
💚 3 tbsp Hidden Valley Ranch seasoning (or 1 packet)
Then, fry and chop about 1 cup of bacon 🥓 and add the veggies, bacon, and 6 cups of chicken broth to a stock pot. Season with salt and pepper.
Add:
🌱 2 tsp parsley
🍗 4 c shredded rotisserie chicken
🥛 1 c of sour cream
🧀 2 c shredded cheddar cheese
and stir thoroughly.
While that cooks, prepare biscuit dough to your liking (or use store-bought—we don’t judge!)
Pour soup into oven-safe ramekins or bowls, then top with the biscuit dough and bake in the oven at 425º for about 15 minutes.
