INGREDIENTS:
- 1/4 cup light soy sauce
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tbsp agave syrup
- 1 tsp sesame oil
- 1 tbsp garlic, minced
- 1 tbsp ginger, grated or minced
- 1 small onion, diced
- 1/2 package Beyond Beef
- 1 bunch of chives, finely sliced
- 3 cups cooked Japanese sushi rice
- 3/4 cup finely chopped and squeezed kimchi
- 4 tbsp gochujang
- 2 tbsp sesame oil
- 3 tbsp soy sauce
- oil for brushing
- 6 strips of seaweed
- Japanese mayonnaise and chives for garnishing
PREPARATION:
- In a medium bowl or cup mix together soy sauce, rice wine vinegar, light brown sugar, honey or agave, sesame oil, garlic, and ginger.
