INGREDIENTS:
2 Tbsp olive oil
1 package Beyond Steak
½ onion, ½ inch diced
3 carrots, peeled and chopped into 1-inch chunks
5-6 large cremini mushrooms, cut into 1-inch chunks (about 2 cups)
3 cloves sliced garlic
1.5 tsp dried thyme
2 Bay leaves
1 tbsp double concentrate tomato paste
2 tbsp all-purpose flour
3/4 cup dry red wine
2 cups vegetable broth
2 cups gnocchi
¾ tsp salt
½ cup frozen peas
PREPARATION:
1. Heat a large dutch oven over medium-high heat with 2 tbsp olive oil. Add the Beyond Steak to the pot and spread into one even layer. Let cook for 3-4 minutes without stirring to allow the steak to sear.
2. Add the onions and ⅛ tsp salt, stir to incorporate and let cook for 5-6 minutes until the onions begin to soften.
