Maybe Iām just super frugal but thereās something in me that just canāt pay that much for storebought vegan ravioli. I think part of it is the fact that the regular ravioli right next to them are being sold for half the price- the plant based mark up is a real thing.
With butternut squash in season, this entire recipe costs around $4.75-$5 usd (3-4 servings). Itās cozy, comforting, fun to make and totally worth the extra effort.
I used a ravioli press for this batch to get a more uniform shape, but donāt worry if you donāt have one! Iāve made this recipe without any special tools and they still turn out amazing. The edges are bit more rustic but the flavorās all there.
