nothing beats homemade pasta šŸ these vegan ravioli are filled with a creamy butternut squash filling and pan fried in an herby brown butter sage sauce. Maybe I’m just super frugal but there’s something in me that just can’t pay that much for storebought vegan ravioli. I think part of it is the fact that the regular ravioli right next to them are being sold for half the price- the plant based mark up is a real thing. With butternut squash in season, this entire recipe costs around $4.75-$5 usd (3-4 servings). It’s cozy, comforting, fun to make and totally worth the extra effort. I used a ravioli press for this batch to get a more uniform shape, but don’t worry if you don’t have one! I’ve made this recipe without any special tools and they still turn out amazing. The edges are bit more rustic but the flavor’s all there.
