Picanha steaks and some delicious tallow potatoes. Cut the potatoes in circles then boil in salted water water until fork tender. Drain and put into ice water. Start the pichana steaks (these are 1.5 inches thick) in a cold pan sitting on their fat cap until it’s rendered out a bit (2-3 minutes until the pan is up to temp). Then sear the steaks, flipping every 45 seconds. I flipped 4 times total. Cut the heat off, add butter and baste both sides for a couple minutes. Let rest 10-15 minutes. Take the left over butter and add some tallow to it. Add the potatoes into the pan with seasoning of choice and cook until golden on both sides. Plate, top with salt flakes and enjoy. #steak #potatoes #dinner #tallow #food #asmr #cooking
