• 1 small red cabbage, cut into wedges
• 1 medium acorn squash, halved, seeded, and sliced into 1/2-inch slices

For the Marinade
• 3 tbsp apple cider vinegar
• 2 tbsp maple syrup
• 1 tbsp whole grain mustard
• 1 tsp salt
• 1/2 tsp black pepper
• 1/3 cup olive oil
