Sometimes, all you need is a comforting bowl of pasta 🫶 Ingredients: 4 cups raw kale, stems removed 1 garlic clove 1/4 cup extra virgin olive oil Juice of 1/2 lemon 1/4 cup toasted mixed nuts 1/2 block silken tofu 1/2 lb. Rigatoni & reserved pasta water 1 cup Daiya Dairy Free Mozzarella Shreds Salt Pepper Steps: 1. Blanch the kale in boiling water for 30 sec-1 minute until color lightens 2. Blend with garlic, olive oil, lemon juice, toasted nuts, and silken tofu. Add salt and pepper to taste. 3. Boil pasta in salted water. Cook until al dente, reserving 1/4 cup pasta water before draining. 4. Add pasta back to pot, adding in sauce and Daiya Dairy-Free Cheese Shreds, stirring to combine and loosening with pasta water as needed. 5. Serve as is or with a drizzle of EVOO.
