My recent go-to simple, flavorful dip for gatherings! All my friends LOVED this. Recipe below :) ithacahummus

Ingredients:
-1 container of Ithaca’s black bean hummus
-2 ears of corn
-1/4 white onion, diced
-1/4 jalapeño, diced
-1/2 avocado, diced (or just do the whole avo, it’s delish)
-1 grated garlic clove
-1/2 lime, juiced
-olive oil
-pinch of salt, pepper and cumin
-toppings: cilantro, cotija cheese
-serve with: tortilla chips, pita bread, veggies, or just eat with a spoon
Recipe:
-heat cast iron on medium-high. Add olive oil to the corn and cook each side for about 3 min
-remove and cut corn off the cob
-combine diced onions, avocado, jalapeño, and garlic to the corn. Add olive oil, lime juice, salt, pepper and cumin. Mix to combine
-add hummus to a bowl, top with corn mixture, cilantro and cotija cheese. Drizzle olive oil on top and serve with tortilla chips, pita or veggies!!!
