This holiday season, I wanted to experiment with seasonal fruit, and let me tell you, this cranberry balsamic glaze did not disappoint. The tart cranberries paired beautifully with the rich, crispy-skinned duck. If you’re ready to elevate your roast game, here’s how to do it:
What You’ll Need:
For the Duck:
• 5 lb whole duck
• 2 tbsp salt
• 1 tsp pepper
For the Cranberry Glaze:
• 1 lb fresh cranberries
• 1/2 cup sugar
• 1/2 cup balsamic vinegar
Directions:
Combine cranberries, sugar, and balsamic vinegar in a saucepan. Simmer for 20 minutes, then strain for a smooth finish.
Preheat your oven to 425°F. Season the duck generously with salt and pepper. Place on a rack in a roasting pan and roast at 425°F for 20 minutes.
Lower the oven to 350°F. Every 30 minutes, flip the duck and baste it with the rendered fat. During the last 30 minutes, brush the duck with the cranberry glaze.
