Traditional Chocolate Mousse (Mousse au Chocolat)
Serves: 6-8
Ingredients
Mousse:
• 6 eggs, separated ( room temperature)
• 1/4 cup sugar
• 16 oz dark chocolate, chopped
• 4 oz cognac or rum
• Pinch of flaky salt
Whipped Cream:
• 1 cup heavy cream
• 1 tbsp powdered sugar
For Serving:
• Cinnamon and cayenne mix
Instructions
1.Place the chopped dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method). Stir until smooth and fully melted. Remove from heat and let cool slightly.
