1 stick + 5tbsp unsalted butter plus mor for pan
1.5 cup granulated sugar (recipe calls 2 cups brown sugar originally)
5 large eggs
3/4 cup cacao
1 tbsp espresso powder
3/4 cup hot water
6 oz dark chocolate
8 oz sour cream or plain yogurt
1 + 3/4 cup all purpose flour
1 tsp salt
1 tsp baking soda
Preheat the oven to 350°F Butter a bundt cake pan, set aside.
Sift cocoa powder, into a medium bowl, add dark chocolate, espresso and boiling water and whisk until the cocoa is completely dissolved. After 5 min. add sour cream and whisk to combine. Set aside to cool.
Sift together the flour, baking soda and salt into a medium bowl and set
aside.In the bowl of an electric mixer fitted with the paddle attachment, cream butter on medium speed until light and fluffy. Add the sugar and beat on medium speed for 5 more minutes, scraping down the sides with a spatula as necessary.
