Happy Monday! These Bite Size Lime Cheesecakes are so easy to make! They are light and fresh, made with fresh lime juice. It’s just the perfect combination of creamy, tangy and sweet!
When I make cheesecake I usually make a huge one in a springform pan. This time I was wanting to make them smaller size and loved how they turned out 😍
For the crust:
- 5 whole graham cracker rectangles
- 2 tablespoons unsalted butter
For the Batter
- 2 x 8-ounce packages cream cheese, room temperature
- 1/2 cup granulated sugar
- 1/2 cup heavy whipping cream
- 2 tbsp corn starch
- 1 large egg, room temperature
- Zest of 1 lime
- Freshly squeezed 1 lime juice
Preheat oven to 300°. Line a cupcake pan with cupcake baking liners so you can easily remove them from the pan.
Using a food processor, pulse the graham crackers into crumbs. In a small bowl, mix cracker crumbs and butter; press on the bottom of cupcake liners. Bake for 5 min. Cool on a wire rack.
