How is Friday treating you? This bowl is pure sunshine with bright, citrusy grapefruit, tender shrimp, a little jalapeño kick, and those juicy pomegranate pops. So fresh and so good that I could honestly eat this by the spoonful.
Grapefruit Shrimp Ceviche

Ingredients
1 lb of uncooked shrimps peeled and deveined
1 grapefruit
Juice from 1 lime
Juice from 1 lemon
1 jalapeño diced
2 tbsp fresh cilantro chopped
3 tbsp fresh pomegranate arils
1 tbsp olive oil
Salt and black pepper to taste
Instructions
Dice the shrimp into bite-sized pieces and place them in a mixing bowl. ( make sure they were previously frozen to avoid bacteria issues)
Squeeze the juice from the lime and lemon over the shrimp, ensuring they are fully coated. Cover and refrigerate for about 30 minutes, or until the shrimp turn pink opaque and firm.
