Ingredients:
• 1 large zucchini
• 3 ears fresh corn or frozen corn
• 1 medium lemon
• 1 1/2 tsp garlic powder
• 3/4 tsp smoked or regular paprika
• 1 1/4 lbs boneless, skinless chicken thighs
• 1 tbsp olive oil
• 2 tbsp unsalted butter
• Chile Crunch
• Fresh parsley
• 1 1/4 tsp kosher salt
• 1 tsp black pepper
Steps:
1 Trim and slice zucchini, cut corn off the cob, and zest lemon.
2 Season the chicken thighs with salt, pepper, garlic powder, paprika, lemon zest, and Chile Crunch.
3 Sear the seasoned chicken strips until golden brown, then set aside.
4 Sauté zucchini and corn with butter in the same pan.
