Smoked Beef Ribs….the best bite in BBQ. We started with 3 racks of ribs. 6.25lbs and 5.75lbs. Often tough to find, ask your butcher for 123A Beef Ribs, ribs 6-8. Trim off the hard fat and season as you wish. We used Meat Church Holy Cow. Place on smoker, rib side down and let the smoker do the work. 275 on Traeger Woodridge Pro for 9 hours, Pecan pellets. No spritz, no wrap, no nothing. While temp is important, probe tender is more important. Pulled em and let em rest down to about 160 degrees. We remove from bone and slice into big bites.
