Chicken Enchiladas with plenty of cream and cheese. Details Below Chicken -2 breasts..1.15lbs total -Season w Hardcore Carnivore Tex Mex Taco & Fajita -Skillet Med Heat. Lil Oil. Cook 2 min a side -Add 1C Chicken Broth, cover. Cook about 8 min -Pull it, shred it, set aside Sauce -Skillet medium heat -Melt 3T butter, add 3T flour, make a roux. Add 1T Taco Seasoning and mix -Add 2C Chicken Broth slowly and whisk. Could easily use less broth -Add about 1/2C Sour Cream and 8oz shredded cheese, we used Monterey Jack -Whisk until it thickens and turn heat off Enchiladas -Add chicken to bowl -Add 8oz or so of Fire Roasted Green Chile -Add 4oz Shredded Cheese, we used Med Cheddar -Add 8oz Soften Cream Cheese -Add 1T Taco Seasoning -Mix well -Soft Taco size flour tortillas, add mixture and roll up -Place in buttered/oiled baking dish -We made 7 enchiladas and had enough mix for 2-3 more -Pour Sauce over top -Top w some more cheese, oven 400 degrees for 20 minutes and 2 minutes on broil to fi...
