Who else remembers those delicious (but definitely not nutritious) Hot Pockets?? I was craving them the other day, so I made this healthy chicken pocket version! Trust me, I made all the mistakes so you don’t have to. 😂
Here’s the recipe:
Ingredients:
• 1/2 lb ground chicken
• My toppings of choice: pizza sauce, mozzarella cheese, spinach, mushrooms, sun-dried tomatoes (I tried pepperoni, but don’t recommend it—too greasy!)
• 1/2 cup grated parmesan + 1/2 cup bread crumbs (for the crust)
Instructions:
1. Flatten the ground chicken (not too thin!) onto parchment paper.
2. Place your toppings on one side of the chicken.
3. Fold it over to seal.
4. Sprinkle the outside with the parmesan & bread crumb mixture.
5. Air fry at 400°F for 10 minutes.
