carbonara pastina?🐷🍝⭐️
Pastina inspired by a traditional Roman carbonara :) give it a try 😉
Ingredients
- 1 cup pastina
-1 1/2 cups broth
-1/2-1 cup water
- 6oz guanciale (or pancetta)
- 4 eggs yolks
- 100g Pecorino Romano cheese, grated
- Salt
- Freshly ground black pepper
Add pastina to a medium saucepan and pour broth and water on top. Sprinkle salt and bring to a boil then lower temperature and simmer for 10 mins. Stir frequently so it doesn’t stick to the bottom. If it’s too thick, add 1/2 cup of water.
While pasta cooks, cut guanciale into small pieces. In a small pan, cook guanciale over medium heat until crispy (approximately 8-10 mins). Strain and save the fat.
In a bowl, whisk eggs and mix in grated Pecorino Romano cheese. Add a generous amount of black pepper then add the fat and continue stirring. Then pour over the cooked pastina (do this immediately while it’s still hot!), followed by 3/4 of the guanciale, and stir vigorously until creamy.
