🌺 If you don’t know what haupia is, it is a coconut pudding like dessert that originates in the Polynesian triangle, and is popular in Hawaii. It consists of cornstarch, coconut milk, sugar and water, giving it this almost silky tofu meets pudding texture.
I decided to make this latte as I really enjoyed a version in Hawaii and wanted to recipe develop my own at home! This calls for a coconut simple syrup that I made using coconut flakes to really bring out the coconut flavor - but you could also just use a plain simple syrup.
Haupia Latte (Hawaiian coconut iced latte)
4 oz coconut milk
1 oz whole milk (or milk of choice)
1 oz coconut simple syrup
.25 oz condensed milk
Double shot of espresso
Ice
Measure out 4 oz of coconut milk and 1 oz of milk into a glass. Add 4-5 ice cubes.
In a separate cup add your coconut simple syrup and condensed milk. Pull a double shot of espresso directly into this cup. Stir till the condensed milk is dissolved.
