SAVE + SHARE! Vodka pasta was my entrée for kala.alana’s Phoenix Rising-themed birthday dinner, and it’s easier to make than you’d think. Sharing the recipe so you can impress at your next gathering:
Ingredients:
• 12 oz pasta of your choice (I used rigatoni)
• 2 tbsp olive oil
• 3 tbsp butter
• 1 small onion, finely chopped
• 3 cloves garlic, minced
• 1/4 cup vodka
• 1 can (14 oz) crushed tomatoes
• 1/2 cup heavy cream
• 1/2 cup grated Parmesan (plus more for topping)
• Salt & pepper to taste
• Red pepper flakes (optional, for a kick)
• Fresh basil for garnish
Instructions:
1. Cook your pasta until al dente. Reserve 1 cup of pasta water, then drain.
2. In a large skillet, heat olive oil and butter over medium heat. Add the onion and garlic, cooking until softened.
3. Pour in the vodka and simmer for 2 minutes to cook off the alcohol.
4. Stir in the crushed tomatoes and season with salt, pepper, and red pepper flakes. Let it simmer for 5 minutes.
