Filipino Misua Soup with Beyond Meat Sausage š

INGREDIENTSā£
3 cloves garlic choppedā£
1 small onion slicedā£
2 Beyond Meat dinner sausage linksā£
2 tbsp vegan fish sauceā£
6 cups vegetable brothā£
4 oz misua noodlesā£
1 Opo squash diced (Patola or chayote works well also)- about 2 cupsā£
Salt and pepper to tasteā£

PREPARATIONā£
1. In a soup pot, heat oil over medium-high heat, add sausage and sautĆ© for 3 minutes or until sausage is no longer pink. Set aside.ā£
2. Using the same pot, sautĆ© the onion for 3 minutes on medium heat. ā£
3. Then add the garlic and your diced Opo Squash. Season with salt and lots of pepper.ā£
4. Add broth and vegan fish sauce. Bring it to a boil and simmer for 5 minutes.ā£
5. Add the sausage back to the pot and the misua noodles. Simmer for 3 minutes.ā£
6. Serve immediately.ā£

Note: these noodles REALLY soak up liquid. So when reheating leftovers add more broth.
