Filipino Misua Soup with Beyond Meat Sausage šŸœ @mealswithmichee⁣ ⁣ INGREDIENTS⁣ 3 cloves garlic chopped⁣ 1 small onion sliced⁣ 2 Beyond Meat dinner sausage links⁣ 2 tbsp vegan fish sauce⁣ 6 cups vegetable broth⁣ 4 oz misua noodles⁣ 1 Opo squash diced (Patola or chayote works well also)- about 2 cups⁣ Salt and pepper to taste⁣ ⁣ PREPARATION⁣ 1. In a soup pot, heat oil over medium-high heat, add sausage and sautĆ© for 3 minutes or until sausage is no longer pink. Set aside.⁣ 2. Using the same pot, sautĆ© the onion for 3 minutes on medium heat. ⁣ 3. Then add the garlic and your diced Opo Squash. Season with salt and lots of pepper.⁣ 4. Add broth and vegan fish sauce. Bring it to a boil and simmer for 5 minutes.⁣ 5. Add the sausage back to the pot and the misua noodles. Simmer for 3 minutes.⁣ 6. Serve immediately.⁣ ⁣ Note: these noodles REALLY soak up liquid. So when reheating leftovers add more broth.
