Gingerbread mushies and little hedgehog buddies! The mushies are held together with white chocolate and adorned with a red glaze! The bottom is melted milk chocolate dipped in matcha coconut flake moss (optional) read below for the full instructions!
½ cup unsalted butter - softened (or shortening)
⅔ cup light brown sugar
3 ½ cups all-purpose flour, plus more for dusting
1 tablespoon ground ginger
1 ½ tablespoon ground cinnamon
⅛ teaspoon salt
1/2 cup heavy cream (or any milk)
½ cup molasses
Add the flour, ginger, cinnamon, and salt to a large mixing bowl. Sift to combine. Set aside.
Cream together the butter and the sugar with your electric mixer until just combined. Scrape down the sides.
Add the milk and molasses and stir on low until well incorporated. Add in the flour slowly. I like to use a large spoon and add a spoonful at a time until there’s no flour left. Stop periodically to scrape the side of the bowl to make sure everything is incorporated evenly. The dough should be...
