Let’s kick off my gingerbread cookie series! 🎄✨🧚🏻I will be showing you all the different things you can do with a simple gingerbread recipe to help you plan your Christmas baking! Less mixing and more options! This cookie uses my “No Spread Gingerbread” meaning this cookie isn’t going anywhere! It works perfectly with cookie molds or for making things like gingerbread houses or cut cookies!
½ cup unsalted butter - softened (or shortening)
⅔ cup light brown sugar
3 ½ cups all-purpose flour, plus more for dusting
1 tablespoon ground ginger
1 ½ tablespoon ground cinnamon
⅛ teaspoon salt
1/2 cup heavy cream (or any milk)
½ cup molasses
Add the flour, ginger, cinnamon, and salt to a large mixing bowl. Sift to combine. Set aside.
Cream together the butter and the sugar with your electric mixer until just combined. Scrape down the sides.
