Wood Ear Mushrooms! ๐๐ผ๐โ๐ซ Theyโre some of the coolest looking mushrooms! These were foraged on my parents property. The stump of a fallen tree completely covered in delightful little mushies! A dream come true for me!
Wood ear mushrooms are high in fiber and polyphenol antioxidants! They contain a variety of prebiotics as well. They may help to reduce LDL cholesterol.
Wood ear mushrooms are foraged, cut up and dried. Then stored in an air tight container. They are then cooked thoroughly and used in a variety of ways including salads, soups (I like ramen), dumplings and stir fries! A wood ear pizza is next on my list. Studies have even shown that boiling them increases their antioxidant activity.
