Hosted a Christmas dinner for the first time ever and what better meal to make than a prime rib? I was multi-tasking like crazy, but the pay off was worth it!! PRIME RIB: 5.5 lb boneless rib roast cooking twine COMPOUND BUTTER: 2 sticks butter softened 3-4 sprigs sage 3-4 sprigs rosemary 1-2 sprigs thyme 5-6 garlic cloves ½ tsp pepper 1 tsp onion powder 1 tbsp Worcestershire ½ tbsp seasoning salt *bake at 475 for 30 minutes, then bake at 300 for 2 hours, then set for 30 minutes* If you accidentally make this ahead of time, tent with foil to keep it warm for up to an hour, then 30 minutes before serving, warm it in the oven at the lowest setting HORSERADISH SAUCE: 1/2 c mayo 1/2 c sour cream 1/4 tsp pepper 3 tsp horseradish 1/4 c chives pinch salt 2 tbsp apple cider vinegar AU JUS: ¼ cup fat drippings 3 tbsp flour 1/2 cup red wine 16 oz beef broth BALSAMIC GLAZE CARROTS: 1lb carrots 3tbsp olive oil 2 tbsp honey Salt Pepper Paprika Balsamic glaze Feta cheese Chopped parsle...
