Vamos para sinapore 🇸🇬 with this one pot Hainanese chicken and rice recipe
INGREDIENTS:
• Skin-on chicken thighs
• 2 cups Chicken broth
• 2 cups jasmine rice
• 1 ½ shallots finely minced
• 5 garlic cloves
• ½ tsp salt
• 1” ginger sliced
• 2 green onions roughly chopped
• sliced Cucumber to serve
SWEET & SOUR SAUCE:
• 1 tbsp soy sauce
• 1 tbsp sweet chili sauce
• ½ tbsp sriracha
• 1 tbsp water
• ½ shallot finely chopped
• 1 tbsp rice vinegar
DIRECTIONS:
1) Prep veggies by roughly chopped green onion, finely mince 1 ½ shallots, and slice ginger.
2) In a wide sauce pan, saute the shallots and ginger in oil until softened. Then add minced garlic and saute 1 minutes until fragrant.
3) Add 2 cups of washed rice and saute an additional 2 minutes. Pour in 2 cups of low sodium chicken broth then add salt to taste.
4) Add in deboned, salted, chicken thighs on top of the rice along with the green onion.
