Prior to trying this recipe, I had only put chimichurri on red meat. I made a homemade chimichurri and marinated some chicken thighs in it. I seasoned them with Meat Church BLANCO and cooked them in cast iron with butter and oil. I cooked them until they were charred, but not burned. That’s a key. Then topped them with some more fresh chimichurri after they were done.
