Cauliflower rice with spinach and mushrooms ππΌ Three veggies in one side dish and ready in about 15 minutes! π₯
INGREDIENTS
2 Tablespoons extra virgin olive oil, divided
8 ounces sliced mushrooms
Salt and pepper, to taste
16 ounces riced cauliflower
2 ounces baby spinach
Parmesan cheese, grated
Instructions;
Heat 1 Tablespoon olive oil in a large skillet over medium heat. Add the mushrooms and cook, stirring occasionally, until mushrooms are browned and any liquid has evaporated, about 5 minutes. Season with salt and pepper and set aside.
Using the same pan, heat 1 Tablespoon olive oil over medium heat. Add riced cauliflower, season with salt and pepper, and cook until tender, about 6 minutes. Add spinach and cook until wilted, about 1 minute. Add mushrooms and stir to distribute. Taste and adjust seasoning with salt and pepper as needed. Serve warm and enjoy!
