For the Banana Bread:
3 large ripe bananas, mashed
2 eggs
1/3 cup olive oil
1/2 cup date caramel (recipe below)
1 Tsp. vanilla extract
1 Cup almond flour
1 Cup oat flour
1 Tsp. sea salt
1 Tsp. baking powder
1 Tsp. cinnamon
Instructions:
Mix all ingredients (except banana) together
Pour into bread pan
Peel & slice banana lengthwise and gently press into batter.
Bake in the oven at 350 F for 50 minutes.
For the Date Caramel:
5-6 large dates, pitted and soaked in water for 30 mins
2 Tbsp. almond milk
Blend until smooth.
