Day 2 of easy sheet pan meals!
This one-pan wonder of chicken (raised without antibiotics) and broccoli in a zesty lemon sauce is a quick dinner that's delicious AND nutritious and comes together beautifully on the nights when you need to keep it simple. π₯¦πππ₯
Ingredients:
1.5 lbs. Chicken thighs, bone-in, skin on
3 Tbsp. Olive oil
1/2 Lemon, juiced
1/2 tsp. white wine vinegar
3 cloves Garlic, minced
2 Tbsp. Parsley, chopped
1/2 tsp. Salt
Fresh ground pepper
2 Tbsp. Butter
3 cups Broccoli, chopped
1/4 cup Olive oil
Sprinkle of salt
Instructions:
1. Preheat oven to 400F
2. Mix olive oil, lemon juice, vinegar, garlic, parsley, salt and pepper.
3. In a large bowl, toss chicken thighs in mixture and place on a sheet pan.
4. Roast in oven for 25 minutes.
5. In a second bowl, add chopped broccoli, olive oil, lemon juice, and salt. Toss and add to the same sheet pan.
6. Roast in oven for 25 minutes.
