Welcome to 3 days of easy-peasy sheet pan meals! First up: Shrimp fajitas! This simple recipe heats up the house with tender, juicy shrimp (responsibly sourced, of course) and a medley of flavorful vegetables, perfect for cold days and just-can't-even nights. π§βπ³π₯π₯
Ingredients:
1 lb. Raw shrimp, peeled and deveined
1 Green bell pepper, sliced
1 Red bell pepper, sliced
1 Yellow bell pepper, sliced
1/2 Red onion, sliced
1 Tbsp. Fajita seasoning
1 tsp. Fajita seasoning
Avocado oil spray or olive oil
Instructions:
Preheat oven to 400 F and line a large pan with parchment paper.
In a bowl, spray bell peppers with avocado oil (or drizzle with olive oil) and toss with 1 tsp. fajita seasoning.
Spread veggies evenly on pan and bake for 10 minutes.
After 10 minutes, toss shrimp in 1 Tbsp. fajita seasoning and place on top of the veggies.
Bake for 6-8 minutes or until the shrimp are thoroughly cooked.
