The SUPPER CLUB SALAD! 🥬🧀💜 If you’ve been to SC, you’ve probably had this salad and if you haven’t, here’s a taste! I love to serve it with a cypressgrovers cheese toast, drizzled in honey. Humboldt Fog is a soft-ripened goat cheese with a layer of vegetable ash and those gorgeous, goey edges. It’s been a STAPLE in my house since I was a wee tater tot. Okay, now go try for yourself!
Ingredients
For the shallot vinaigrette
1 shallot, minced
1 garlic clove, grated
2 ½ tbsp. sherry vinegar
1 tbsp. warm water
1 ½ tsp. dijon mustard
1 ½ tsp. whole grain mustard
3 sprigs of thyme, leaves only
1 tbsp. nutritional yeast
Salt and pepper, to taste
½ cup extra virgin olive oil
For the salad
1 head butter lettuce, washed and torn
Mix of chicories, washed and torn
Thin sliced pears or apples
Thin sliced watermelon radishes
Baguette
Humboldt Fog cheese
Honey
Flaky salt
