Coconut confit ribs 🤯 You ever seen a rack like this gordongram ?!?! I smoked ‘em just long enough to flirt with flavor, then dropped ’em in a coconut oil hot tub like they were on vacation in Phuket. I’m talkin’ garlic, chili, lemongrass… and a final fry so crispy, you’ll think I deep-fried a dream. Then I hit ’em with a sweet chili glaze that smacked something stupendous! Recipe below ⬇️

Ingredients:
🔹2 racks baby back ribs, cut into individual bones
🔹3–4 cups coconut oil (enough to submerge ribs in a deep pan)
🔹6 garlic cloves, smashed
🔹4 Thai bird chilis (or fresno for less heat), halved
🔹1 stalk lemongrass, smashed
🔹1-inch ginger, sliced
🔹1 tbsp coriander seeds
🔹1 tbsp salt
🔹3 tbsp melindasfoods sweet chili sauce
🔹2 tbsp fish sauce
🔹2 tbsp rice vinegar
🔹1 tbsp brown sugar
🔹Juice of 1 lime

To Make:
1️⃣Cut ribs into individual bones. Season with dry rub of choice. Smoke at 250 for 1 hour
