🍝 Ingredients
• 1 cup whole-wheat orzo
• 1 tbsp olive oil
• 1 cup chopped leek
• 3 garlic cloves, minced
• 12 oz frozen artichoke hearts (or 14 oz canned), chopped
• 1 cup whole milk
• 4 oz reduced-fat cream cheese, cubed
• 1 tbsp lemon zest
• 2 tbsp lemon juice
• ⅔ cup grated Parmesan (divided)
• ½ cup fresh parsley (divided)
Directions:
1️⃣ Cook orzo, reserve 1 cup of water, then drain.
2️⃣ Sauté leek + garlic in olive oil for 5 mins.
3️⃣ Add artichokes, heat through.
4️⃣ Add milk, cream cheese, lemon zest + juice, and ½ cup Parmesan. Stir until creamy.
5️⃣ Add cooked orzo + 6 tbsp parsley. Stir in reserved pasta water to loosen.
6️⃣ Serve topped with remaining Parmesan + parsley.
