𧔠½ tablespoon maple syrup

š§” salt, pepper and herbs to taste

INSTRUCTIONS

1. Preheat oven to 425°F (220C). Chop your carrots and butternut squash, while remembering to remove seeds from squash.
Ā
2. Place them on baking tray cut side down, coat with oil, salt, and pepper.
Ā
Time to rock and roast! After 30 minutes, add the onion for another 30 minutes.
Ā
3. Now for the main event, blending! Add the scooped squash flesh, onion, garlic, maple syrup, salt, nutmeg, ginger, and vegetable broth into a blender. Blend until creamy.
Ā
4. Adjust seasoning if needed and garnish with your favorite toppings, I used parsley and black pepper.
