Penne Alla Vodka….but we used Rigatoni. We have made a variety of versions of Vodka sauce and this one hits just right. Made it twice this week. How did we do @AryaHungry …. Details below….. -12’ Steel Pan, medium low heat -Add heavy dose of Olive Oil and let heat a few minutes -Add 1 Shallot, finely diced and a big spoonful of Calabrian Peppers. Sub in Red Hot Chili Peppers or Crushed Red Pepper Flakes -Let it cook for 5-6 minutes -Add 8 Cloves of minced Garlic, let it cook 1-2 minutes -Add big spoonful of Tomato Paste and let it cook a few minutes, bring it all together -Add 5-7oz of Vodka, lite it up and let alcohol burn off -Add 1lb of San Marzano Tomatoes, break them up in hands, mix well and cook for at least 10 minutes. Good time to add salt. -Drop in your pasta at this time to salted boiling water -Add 1/2C to 1C of Heavy Cream, mix well -Add sauce to blender for that perfect texture -Return sauce to pan, drop in cooked pasta -Add 1/2C ish of Pasta Water, 2-3T Butter and 1...
