SESAME 75
・1½ oz Sesame-Washed Empress 1908 Indigo Gin
・½ oz Ginger Liqueur
・½ oz Yuzu Juice
・½ oz Honey Simple Syrup
・Barspoon of Rice Vinegar
・Sparkling Wine, to top
・Lemon Wheel and Scallion Ribbons, to garnish
METHOD: Mix 6oz (~180ml) of sesame oil with 750ml bottle of spirit. Shake and let sit at room temp for 4-5 hours before placing in the freezer to solidify overnight. Strain solidified sesame oil and fat-washed spirit through cheesecloth or coffee filters until spirit runs clear. Add all ingredients, except for sparkling wine, to a shaker. Strain, top with sparkling wine, and garnish with a lemon wheel and scallion ribbons. Enjoy!
