Cottage Cheese Mini Pizzas 🍕
These are high-protein, cheesy, and super easy to customize 👇
Here’s how to make them:
1️⃣ Blend 1 cup of 2% cottage cheese until smooth.
2️⃣ In a large bowl, whisk your blended cottage cheese with 2 eggs.
3️⃣ Add 2/3 cup all-purpose flour, 1 tsp baking powder, 1/4 cup shredded mozzarella, and 1 tsp each of dried basil, oregano, and parsley. Mix it all together.
4️⃣ Line a baking sheet and form mini pizzas
5️⃣ Add your toppings: spoon on some pizza sauce, sprinkle with more mozzarella, and pile on your favorites (we used pepperoni, black olives & chopped onion).
6️⃣ Bake at 400°F for 25–30 minutes
