EIP Toast
It’s tomato season! Need a delicious recipe for using up extra cherry tomatoes — try eggs in purgatory which is the Italian version of shakshuka
Recipe:
Once the pan is pre-heated, add olive oil diced garlic and yellow onion over medium-low heat. When the onions are translucent and garlic is fragrant add the sliced cherry tomatoes. Next, season with salt, pepper and red pepper flakes along with torn basil and diced parsley then bring to a simmer
When the tomatoes have burst and sauce thickens, you can transfer to a blender for a smooth sauce or keep as-is for more texture. Next, add eggs into the tomatoes and cover until the eggs are set about 2-3 minutes
Meanwhile, toast some bread and rub garlic on it for extra flavor
When the eggs are set, remove from the heat and either add onto toast like I did or serve in a bowl with a side of toast
Finish with freshly grated parmesan, basil and parsley for garnish
