Icelandic Yoast
Icelandic sourdough bread toasted in a skillet then topped with siggisdairy plain yogurt mixed with lemon zest, sea salt + fresh dill, smoked salmon, pickled red onions, pickled mustard seeds + garnished with dill (recipe below)
Pickled Red Onion:
Combine 1 cup water, 1 cup distilled red wine vinegar, 2 tbsp kosher salt, 1/4 cup sugar bring to a simmer then remove immediately from the heat. Meanwhile, slice a large red onion (or two medium) add to an airtight container then pour the brine over sliced red onions. Once cooled, put in the fridge which you can use within 30 minutes, if not it will keep for the next week
Pickled Mustard Seeds:
Add 2 tbsp mustard seeds and 24oz water, bring to a low simmer and cook for up 45 minutes until they plump up then strain and add to your brine cooking on low until half the liquid is evaporated. Remove from heat and transfer to an airtight container
