Smoky Bourbon Vanilla Crème Brûlée
Cooked low and slow at 325°F / 163°C
Ingredients (Serves 6):
• 4 cups heavy cream
• 2 tbsp vanilla extract
• 2 tsp cinnamon
• 2 tsp bourbon
• 6 egg yolks
• 1 cup sugar + more for topping
• 1 tsp salt
Quick method:
Heat the cream. Whisk the rest. Combine. Pour into ramekins. Water bath. Grill at 325°F/163°C for ~45 mins. Chill. Torch the tops. Crack into it.
