I haven’t done a recipe post in a while so here you go! I love me some bibimbap cuz it’s such a hearty, spicy, and savory dish that has tonssss of veggies in it. Also it’s a great way to use up all your old veggies and banchans that are in your fridge. This is not your typical bibimbap as I added bok choy and some Swiss chard, but feel free to add in whatever veggies you want ❤️.
Recipe:
1 cup cooked rice
1 carrot julienned
Small handful of mushrooms sliced
3 bok choy leaves
Handful of leafy greens like swiss chard or spinach
1/4 onion sliced
1 egg sunny side up
Gochujang to taste (I use about half a spoonful)
Drizzle of sesame seed oil
Sauté each veggie separately (I mean it’s all getting mixed together so technically you can sauté them all together, but I did cuz it was pretty to keep them separated 🤣) with olive oil and a small pinch of salt.
Assemble onto bowl and add sesame oil and gochujang and mix mix mix!
