Ingredients - 1/4 cup vegetable oil - 3 Tbsp. salted butter - 2 lb. russet potatoes, peeled and diced into 3/4 in. pieces - 1 tsp. ground black pepper - 2 tsp. kosher salt - 1 tsp. garlic powder - 1 large yellow onion, chopped (about 2 cups) Directions 1. Heat oil and butter in a large, high-sided stainless steel or cast iron skillet over medium-high. Add potatoes and toss until coated. 2. Cover and cook, undisturbed, for 5 minutes. Add onions and salt, pepper, and garlic powder; toss until combined. 3.
