Carrot Walnut Muffins! 🥕

I absolutely love muffins. But, starting your day with a sugar filled, starchy baked good is a recipe for disaster. 🤦🏽♂️

That's why I created these healthy mini-muffins. To be able to enjoy a convienient food option thats low in starch/sugar, and loaded with healthy fats and benefical nutrients! 💯

This recipe is a bit of a work in progress for me, but I will say it's incredibly delicious as it is.

3/4 cup blanched almond flour
2 pasture-raised organic eggs 🥚
1 cup shredded carrots 🥕
1/4 tsp high-quality sea salt
1 tsp ceylon cinnamon
1/4 cup melted grass-fed butter or coconut oil
1/3 cup finely ground Walnuts
2 tsp vanilla extract
1/8 cup yacon syrup (Optional to add more yacon for a sweeter outcome) •

1) Combine all ingredients and mix well
2) Place in a mini cupcake tray
3) Bake for 12-14 mins @ 350° F
4) Allow them to cool, then store in fridge. •

To my surprise, these muffins taste even better cold out of the fridge than they do...
