These are the lemon bars from my spring soirĂŠe video :) theyâre simple, bright, and delicious!! Nothing like a crunchy graham cracker with a rich tangy lemon curd.

â˘1 cup graham cracker crumbs
â˘4 tbsp unsalted butter
â˘1/4 cup brown sugar
â˘1 pint (about 2.5 cups) blueberries
â˘1/4 cup sugar
â˘1 tbsp lemon juice
â˘2 large lemons
â˘2 cans condensed milk
â˘1 tsp vanilla extract
â˘1/2 tsp fine sea salt
â˘3 egg yolks
Preheat oven to 325°F. In a medium bowl, add graham cracker crumbs, butter, and brown sugar; mix using a spatula. Line an 8x8 baking dish with parchment paper (skip if using a silicone one like me) and add the graham cracker crumbs. Using your hands or the back of the spoon, gently push down to create an even crust. Bake for 12-15 minutes and cool down.
To make the blueberry compote, in a small saucepan over medium heat, combine blueberries, sugar, and lemon juice. Cook until the berries burs...
