-Shimaaji; black garlic underneath, plum soy.
-Madai; Umeboshi (pickled plum, ponzu sauce.
-Kinmedai; yuzu salt, plum soy
-Akami; buttered shiitake mushrooms, roasted almond underneath
-Chutoro; Ossetra caviar.
-Ohtoro; uni topped
-Nodoguro (black throat sea perch) toasted sesame topped
-Uni; Hokkaido sea urchin
-Faroe salmon; overnight marinated, lemon zest
-Tennen (wild) Kanpachi; chopped, miso ginger chives
-Hotate; yuzu miso sauce
-Toro Takuan; chopped toro and pickled radish
-Torrija; soaked in milk, lemon, lime, orange peeled, cinnamon
My favorites include the alami, chutoro, faroe salmon but all the courses were equally flavorful, memorable, and overall amazing.
