SMASHED HARISSA SWEET POTATOES ON WHIPPED CHEESE☀️🍠🔥 Serves 4 4 small sweet potatoes Olive oil Sea salt 150g Arla Apetina White Cheese 200g Arla Skyr yogurt 1 heaped tbsp harissa 1/2 tsp smoked paprika 2 tbsp runny honey Small bunch parsley, leaves finely chopped Juice of half a lemon ½ garlic clove, finely grated METHOD Preheat oven to 200 degrees fan setting. Chop the sweet potatoes into roughly 4 inch chunks and add to a large baking tray. Drizzle generously with olive oil and season with sea salt. Cook for 25 minutes until cooked and soft. Combine the harissa, smoked paprika and honey in a small bowl. Using the base of glass, gently smash down the sweet potatoes. Spoon over the harissa mix and return to the oven for 20 minutes or until slightly sticky and caramelised. Crumble the white cheese into a food processor, add the skyr and a good pinch of salt and blitz until smooth and creamy scraping down the sides as necessary.
