Raspberry Pistachio Chocolate Truffles š«š
A no-bake & easy Valentineās Day dessert to try this year for friends or that special someone!! So cute to package up for gifts or serve after dinner, plus talk about this flavor combination š Hereās what you need to make this treat:
2 c dark chocolate chips
1/2 c coconut cream (canned)
1/4 tsp espresso powder
1/4 tsp vanilla extract
Pinch of sea salt
1/3 c chopped pistachios
1/3 c chopped freeze-dried raspberries (I get the target brand!)
For rolling: coco powder, ground freeze-dried raspberries
In a small saucepan, heat the coconut cream over low heat just until itās about to boil.Ā
Pour the hot cream over the chocolate in a medium bowl & let sit for 2 minutes. Stir with spatula until chocolate is fully melted & smooth. Add the vanilla, espresso powder, salt & stir again. Then add the chopped pistachios & raspberries, gently combine.
Cover bowl with plastic wrap & place in fridge for 3 hours, until mixture is firm & scoopable.
