DILL PICKLE Potato Salad đ
Although youâd think this is a summer classic, potato salad is SO good year round & makes for a perfect side dish to any meal!! My version is GF/DF, easy to make & full of flavor thanks to little a pickle boost đ
1 lb baby red potatoes, washed & quartered (donât have to peel them!)
2 hard boiled eggs, chopped
1/2 c chopped dill pickles
1/2 c chopped celery
1/3 c mayo - I use primalkitchenfoods
1 tbsp Dijon
1 tbsp dried dill
1 tsp honey
1 tsp white vinegar
Salt & pepper to taste
Chopped parsley
Cut the potatoes into quarters & place them in a large pot. Fill with cold water until it is 1â over the top of the potatoes. Set the pot over high heat, bring to a boil. Cook potatoes for 10-13 minutes, until fork tender.â¨Meanwhile, in a medium mixing cup add mayo, mustard, honey,, vinegar, dried dill, salt & pepper to taste.
