SWEET POTATO SHEPHERDS PIE 🥧 The ultimate comfort meal during winter in my opinion 😉 Here’s my take with sweet potatoes & a little crunch on top - flavorful, filling, plus easy to make with cooking it together all in one pan!! 2 large sweet potatoes, peeled and cut in large chunks 2 tbsp olive oil 2 stalks celery, diced 2 large carrots, peeled and diced 1 small onion, diced 1 lb lean ground beef, I use 85/15 1 tbsp tomato paste 1 tbsp soy sauce 1 c broth (can use beef or chicken) 1/2 c frozen peas 1 tsp of fresh thyme / garlic powder / rosemary 1/2 tsp smoked paprika / salt / pepper Optional topping: panko breadcrumbs, grated parmsesan, parsley First make the sweet potato mash by placing chunks in a pot on the stove & cover with water. Turn the heat to high, bring to a boil & cook for 10-12 minutes, or until the potatoes are soft when pierced with a fork. Drain, add a splash of milk and 1 tbsp butter, mash until creamy, then set aside.
